Last week, I stopped at artisanal baker Eric Kayser’s shop to buy a pain au chocolat but it was too late.

 

 

When the manager told me that they were sold out yet had something even better – I looked at him doubtfully, but he wasn’t kidding.

 

Now I’m head over heels for this “plié” au chocolat – a long rope of croissant dough filled with pastry cream and semi-sweet chocolate chips, folded over and over and over again to create an opening in the middle. The top is brushed with egg and sprinkled with finely ground sugar.

 

In one delicious moist, crisp and decadent bite - I knew that a twenty-year love affair with pain au chocolat was over and it was time to move on...

 

These beauties are the first to sell out in the morning so make sure to get to a location in Paris near you, bright and early.

I always pick up a quarter of the largest round of bread at the Kayser just off l'Odéon in the 6th. It is my favorite daily bread in terms of developing flavor in your mouth. The new Kayser on 77 quai Panhard-Levassor past Bibliotheque Mitterand facing the Seine in the 13th has an awesome brioche with pistache et chocolat. We found the store one day when rollerblading and spotting a Kayser sandwich bag in someone's hands - we were on the hunt after that, and well-rewarded.

Can't wait to get back and eat one (some) lucky me... There is a Kayser bakery nearly next door! Whopee!

Mmmm...pain au chocolat is a favorite here ... have not tried Eric Kayser's yet though. The pastry you describe sounds very much like the tornade de chocolat that is made at the boulangerie near the Square des Batignolles. It's sinfully good.

Je l'aime...miam. I don't usually see these in America, and the first time I ate them, I loved them. I'll have to try and re-create them.

I LOVE these! When I lived in Paris, I used to eat them from a bakery on rue Montorgueil and they were called "Couque Suisse". Thanks for the memories!

Many boulangeries feature this, often known Suisse (also chocolatine, pépito, drops, brioche savoyarde, cravate, patte d'ours ou pavé parisien). It can be made with brioche dough, or pâte feuilletée.

Not usually one of my faves, but if Eric's are selling out early, you are on to a winner.
