Sneak Preview: Septime’s Chef-Owner Bertrand & Co-worker Théo Opening Clamato Oyster Bar
Septime restaurant’s Chef-Owner Bertrand Grébaut and his co-worker Théo Pourriat have been quietly working through the summer to open a new oyster & seafood restaurant next door… just in time for the cold weather when oysters are on everyone’s minds.
Théo tells me they decided upon the name Clamato – a well-known juice brand in the States that is a base for Bloody Marys. It is a light and zesty drink seasoned with a blend of tomatoes, onions, celery, spices and clam juice – but most folks also add beer, vodka or gin plus a dash of hot sauce, lime, fresh celery and alcohol-soaked horseradish.
The renovation team is currently putting in a 26-foot bar that runs the length of the room that will lead to a dining room on the back that will be the sit down restaurant.
Théo says they’ll be more than an oyster bar with all types of fish and shellfish plates along with natural wine, beer and of course, the fantastic Clamato Bloody Mary’s with fresh clam juice.
It will only be open in the evenings (but could change to all day) with no reservations, and the best news is that is will be open on Sunday!
In only four weeks, it will be one of the most sought out
tables barstools in the city.
