<p><b><a href="www.osterianerodavola.com">Osteria Nero d&#8217;Avola Taormina</a> &#8211; Messina, Italy. I loved the c</b><b>arpaccio d&#8217;artichaut cru, huile d&#8217;olive, parmesan et citron cedrat &#8211; it reminded me of my beautiful wine trip in Sicily, everywhere there was the taste of the sun, lemon and fantastic acidity. When you bit into the Cedrat lemon is like an apple in your mouth&#8230; everyone should try this!</b></p>

<p><b>When I was little, playing with my cousins in Alsace waiting for a special meal that revolved around a dish called Baeckeoffe &#8230; it&#8217;s like a ragout with 4 different meats, potatoes and Riesling cooked in a special terrine in the oven for many hours&#8230; the flavor of the wine marinated in the meat was fantastic.</b></p>

<p><strong>My wine hero right now is <a href="http://www.nytimes.com/2005/05/25/dining/25pour.html?pagewanted=all">Jösko Gravner</a>, he ferments his wine in terra-cotta amphorae in a small Italian Fruili town called Olslavia! This winemaker makes a wine like nobody else&#8230;. So pure and elegant! When you watch the color of his wine it&#8217;s an orange with a line of pink of the top&#8230; with complex different tastes! </strong><strong>It&#8217;s like a white wine but vinified like a red wine&#8230; <strong>Perfect with a raw tartare of chinchard fish with cherry&#8230;</strong></strong></p>
